So today I planned on grilling outside and got everything together to make pork chops with Blackberry BBQ sauce and veggie skewers. However, it hit 92 degrees with no wind what so ever so we decided not to go outside. Instead I used the grill pan and did the same thing. I am pretty sure going outside would have been a better idea...the kitchen was like a sauna. I just wanted to share my sauce recipe!
2 cups blackberries
1/2 cup reduced sugar ketchup
1/2 Tbsp Splenda brown sugar
1/4 cup tomato sauce
1 tsp garlic
1/4 tsp grated ginger
1/4 tsp cayenne pepper
salt and pepper to taste
Heat a sauce pan on medium, and add your blackberries and cook for about 3 minutes until they start to soften.
Add the rest of the ingredients to the pot, and simmer for approximately 20 minutes.
Once the sauce is done, pour into the blender and blend until smooth. This gets rid of almost all the little seeds.
I brushed my sauce on pork, but you can put this on just about anything!
Recipe makes 2 cups of sauce
